Monday, Monday. Home from a fantastic weekend away w/friends. Still in recovery, but energized by one of the first summer-like days of spring. The garden is freshly tilled & ready to produce some of the best meals of the season! Due to my mini absence, the fridge is nearly bare so I'm very happy that the first meal I'll be sharing with you came together as well as it did.

Motivation: 1 lb ground turkey & a small head of cabbage
The Goal: turkey meatloaf, coleslaw, & pasta side
Time: approx. 30 mins.

#1. Checked www.allrecipes.com for a turkey loaf recipe. Here's the link. Incredibly-Cheesy-Turkey-Meatloaf. Adults gave it a thumbs up. Kids were indifferent ; ) It's meatloaf...what can I say?!
#2. Made sure I had all ingredients for coleslaw ... positive : )

Confession; unless I'm trying something completely new, I rarely measure when cooking. That said, here's my not-so-scientific slaw recipe:

3 cups shredded or chopped cabbage
1/2 cup chopped carrots
1/2 of a small onion chopped
1 t poppy and/or celery seed
salt & pepper to taste

I throw each veggie into a basic chopper and mix in a medium bowl. You can add seasonings now or after the dressing is mixed in.

Dressing is completely to taste, but here are approximates (mix in a separate small bowl or measuring cup to make sure you get the desired taste before mixing w/slaw):

1/4 cup mayo
2-3 T apple cider vinegar
2 T sugar

The initial plan was to make some spinach linguine & toss some pesto in w/it for my final side, but got a little caught up in the other recipes. So Ramen noodles to the rescue (and bonus, kids love 'em)! Watch out for the spinach linguine, though!!! Good night!
